Ingredients
For the Meatloaf:
- 1 Β½ pounds ground beef (80/20 works best)
- 1 cup breadcrumbs
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 2 large eggs
- Β½ cup milk
- 2 tablespoons ketchup
- 1 tablespoon Worcestershire sauce
- 1 teaspoon salt
- Β½ teaspoon black pepper
- 1 teaspoon dried parsley
For the Glaze:
- β cup ketchup
- 2 tablespoons brown sugar
- 1 teaspoon mustard (optional for a tangy kick)
Directions
- Preheat oven: Set your oven to 375Β°F (190Β°C). Line a baking sheet with foil or lightly grease a loaf pan.
- Mix the loaf: In a large bowl, combine ground beef, breadcrumbs, onion, garlic, eggs, milk, ketchup, Worcestershire sauce, salt, pepper, and parsley. Mix gently with your hands or a spoonβdonβt overmix!
- Shape it: Form the mixture into a loaf shape (about 8×4 inches) and place it on the prepared pan.
- Make the glaze: In a small bowl, whisk together ketchup, brown sugar, and mustard.
- Add glaze: Spread half of the glaze evenly over the top of the loaf.
- Bake: Bake for 45 minutes. Remove from the oven, spread the remaining glaze on top, and bake for an additional 10 minutes (or until the internal temperature reaches 160Β°F / 70Β°C).
- Rest & serve: Let the meatloaf rest for 5β10 minutes before slicing. Serve with mashed potatoes and green beans for the ultimate comfort meal!
