Ingredients
- 12 ounces spaghetti (or your favorite pasta)
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 small onion, thinly sliced
- 1 can (14.5 ounces) diced tomatoes (with juice)
- 4 cups vegetable broth (or chicken broth)
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon dried Italian seasoning
- 1/4 teaspoon red pepper flakes (optional)
- 2 cups fresh spinach (optional)
- 1/2 cup grated Parmesan cheese
- Fresh basil for garnish
Directions
- Heat it up: In a large pot, heat olive oil over medium heat. Add garlic and onion, cooking for 2–3 minutes until fragrant and slightly softened.
- Add everything in: Stir in the diced tomatoes, pasta, broth, salt, pepper, and Italian seasoning.
- Bring to a boil: Increase heat to high and bring the mixture to a boil.
- Simmer and cook: Once boiling, reduce to medium heat. Cook uncovered for about 10–12 minutes, stirring occasionally, until the pasta is tender and most of the liquid is absorbed.
- Mix in the greens: Stir in spinach (if using) and cook for 1–2 minutes until wilted.
- Finish with cheese: Remove from heat and stir in Parmesan cheese until melted and creamy.
